- Limpiamos y picamos la cebolleta y el puerro. Los ponemos a pochar en una cazuela con un poquito de aceite de oliva a fuego bajo


- Lavamos y picamos el tomate y lo añadimos a la cazuela cuando la cebolleta y el puerro empiezan a estar blandos


- Limpiamos y picamos el resto de verduras calabaza, calabacín, berenjena, judías verdes y zanahoria. Cuando el tomate empieza a estar blando añadimos las verduras a la cazuela. Añadimos sal y pimienta negra recién molida



- Rehogamos 3-4 minutos y añadimos el caldo de verduras. Subimos el fuego y dejamos cocer hasta que las verduras estén blandas, unos 10-12 minutos


- Retiramos del fuego y añadimos el queso crema. Mezclamos bien y batimos con la batidora hasta tener una mezcla homogénea



- Emplatamos y servimos caliente con un chorrito de Aceite de Oliva. Yo le he puesto Vidueña Madura

- Mientras se cuecen las verduras cortamos en dados dos rebanadas de pan. Los freímos en aceite de oliva y reservamos en papel absorbente



- Los añadimos a la crema y..... Buen provecho!!!!!
