  1. Asamos la calabaza a unos 200º- 250º C, durante unos quince minutos, hasta que esté blandita, depende del horno, estaremos atentos para que no se dore demasiado.
  2. Mientras tanto vamos preparando el caramelo. Vertemos el azúcar moreno en un recipiente y lo ponemos al fuego con unas gotitas de limón, dejamos que se vaya fundiendo el azúcar, cuando esté totalmente fundido lo vertemos en los moldes, cubriendo el fondo y las paredes.
  3. Ponemos a cocer las manzanas troceadas en otro recipiente con el zumo de naranja, hasta que estén un poco blanditas, reservando un poco del zumo de naranja para disolver luego el Agar-Agar o la Maicena.
  4. Cuando ya tengamos listas las manzanas y la calabaza, añadimos ésta última al recipiente con las manzanas y con el azúcar vainillado, dejamos cocer un poquito más y trituramos con la batidora.
  5. Dejamos cocer unos cinco minutos.
  6. Disolvemos el Agar-Agar en el zumo de naranja que hemos reservado previamente y lo agregamos al puré, dejándolo cocer 1 ó 2 minutos como mínimo a fuego suave.
  7. Si se usa la Maicena, simplemente hay que disolverla en un poco de zumo y agregarla al puré.
  8. Vertemos esta mezcla en los moldes (yo he usado 6 pequeños) y dejamos enfriar primero a temperatura ambiente y luego en la nevera.
