- Una vez pasado el tiempo aplastamos la calabaza con un tenedor hasta tener un puré. Reservamos.
- Mezclamos la harina, bicarbonato sódico, canela, clavo, sal y nuez moscada. Reservar
- Batimos con las varillas los huevos y el azúcar hasta que blanqueen.
Añadimos el aceite en un chorrito hasta que esté integrado. Dejamos batir durante un par de minutos. - Ahora es el momento de agregar el puré de calabaza que preparamos antes. Batimos hasta que esté bien integrado, si es necesario despegamos con una espátula los laterales del bol.
- Tamizamos la harina especiada o la introducimos en el bol mientras la tamizamos. Se incorpora poco a poco, yo la he agregado en tres veces. Se deja batir hasta que esté todo integrado. Si es necesario se despegan los bordes y fondo del bol con una espátula para ayudar a mezclar bien.
Precalentamos el horno a 175º con calor abajo y ventilador o calor abajo y arriba. - Una vez terminada la mezcla se añaden las nueces y pasas. Mezclamos bien para que queden repartidas uniformemente.
- Se engrasa el molde bundt cake (o uno normal) y se vierte la mezcla.
Se hornea unos 45-50 minutos, estará listo cuando al pincharlo en el centro el palillo salga limpio. - Dejar enfriar en el molde unos 10 minutos. Pasado ese tiempo agitar un poco el molde y desmoldar. Se deja enfriar totalmente sobre una rejilla.
