Ahora es el momento de añadir los judiones y el compango. Podemos trocearlo si lo deseamos, en especial el lacón, en tantos trozos como comensales por ejemplo.
  4. Tapamos el guiso y lo dejamos cocinar a fuego medio hasta que observemos que está reduciendo el caldo y la calabaza y el lacón estén en su punto adecuado.
