- Para el couscous, lo mezclo en seco con las especias. Yo uso unas para couscous que compro en Marruecos, pero podéis especiarlo con lo que queráis. La Garam Masala también le va muy bien. Lo hidrato con agua salada hirviendo y una vez pasado el tiempo de reposo, añado un chorrito de aceite para despegarlo removiendo con un tenedor y añado más sal si veo que le hace falta al probarlo.
- Corto los ajos en láminas y los hago con un chorrito de aove en la sartén. Una vez dorados los retiro para que sólo quede el sabor, pero se pueden dejar.
- Picamos la cebolla y la añadimos al aceite donde doramos los ajos. Cuando esté un poco hecha añadimos la calabaza cortada a daditos pequeñitos.
- Añadimos las especias y un chorrito de agua. Añadimos la cantidad de garbanzos que queramos. Yo uso de bote porque es rápido y quedan más blanditos. Removemos y dejamos que se cocine tapado.

- Cuando a la calabaza le quede poquito para terminar de hacerse, añadimos dátiles y pasas troceaditos al gusto. Es opcional pero le da un toque dulce muy rico.

- Cuando la calabaza esté lista, añadimos una cucharada de miel y otro chorrito de agua, y dejamos que se cocine hasta que quede meloso. Este paso también es opcional, recomiendo probarlo antes de añadir la miel.
- Emplatamos con el couscous, la calabaza, y los frutos secos o semillas que queramos, y listo!
