Después si hay mucho caldo retiramos y trituramos lo demás hasta conseguir una crema ligera. Si queda muy espesa añadimos caldo. Mantenemos caliente pero sin cocer.
- Picamos la otra media cebolla, la calabaza que habÃamos reservado y pochamos en aceite virgen extra. Una vez este pochadita añadimos un vaso de vino blanco y reducimos.
- Después añadimos el arroz y mezclamos todo bien y vamos añadiendo la crema que tenÃamos poco a poco y sin dejar de remover, cuando vaya absorbiendo añadimos más y asà hasta tenerlo a punto (15-20 min)
- Una vez tengamos el arroz, apagamos echamos un buen pegote de mantequilla y el parmesano, removemos para adquirir la cremosidad que queremos y emplatamos enseguida.
