- 500 grs calabaza (de invierno)
- 100 grs guisantes congelados
- 2 cebolletas
- Queso Parmesano rallado
- 2 dientes ajo
- 1 huevo
- Pan rallado
- Sal, pimienta y Aceite de oliva

- Para cocinar la calabaza podemos usar varias técnicas: cocida, al vapor, asada o la que he empleado yo en esta ocasión, al microondas. Limpiamos y troceamos la pieza y la disponemos en un plato apto para microondas. La cocemos tapada durante 9-10 minutos a máxima potencia (en mi caso 800w)
Cocemos unos minutos los guisantes en agua hirviendo. Colamos y reservamos. - En una sartén con 2 cucharadas de aceite, sofreímos las cebolletas y el ajo. Incorporamos los guisantes y removemos para que vayan cogiendo calor.
Añadimos la calabaza cocida y salteamos todo el conjunto. - Vamos aplastando los trozos de calabaza (está muy blanda y se deshace con facilidad) para ir creando una pasta. Incorporamos el queso Parmesano rallado, salpimentamos y removemos.
- Vertemos toda la mezcla en un plato y dejamos reposar hasta que se enfríe. Formamos las croquetas (redondas o alargadas) ayudándonos con las manos bien limpias. Las vamos pasando por huevo batido y luego por pan rallado.
- Las vamos friendo por tandas en una sartén o freidora con aceite caliente. Según las tengamos bien doradas las pasamos a un plato con papel absorbente.
Servimos nuestras croquetas de calabaza y guisantes calientes. Podemos acompañar con una buena salsa de tomate casero para dippear.
