  1. Yo no me atuve exactamente a la receta, puse a hervir agua, pelé una berenjena, la corté en cuadritos y la puse a cocer en el agua con sal. Mientras tanto en un wok puse a saltear cebolla picada, medio pimiento verde picado (chile dulce) y un jitomate pelado y picado. Una vez cocida del berenjena la escurrí en una coladera, la prensé bien y la puse con la salsa, añadí entonces un pedazo de queso rallado y 2 huevos crudos, sal y pimienta.
  2. El huevo es necesario para que se puedan hacer las tortitas. Ponemos un sartén con aceite y vamos poniendo cucharadas del preparado y al freírse de un lado las volteamos por el otro.
  3. Ponemos a hervir 3 jitomates haciéndoles una cruz con el cuchillo en la pielecita para poderlos pelar, los molemos en la licuadora y ponemos la salsa con un poco de sal y pimienta en una cacerola.

    Para servir las tortitas ponemos un espejo de salsa de jitomate y dos tortitas por encima.
